I feel like a lot of recent games just don't set the challenge of having to even focus on your task and just seem to hold your hand with things like follow the marker and other such devices and for me that takes a lot of the fun out of it.

I loved all my 64 games growing up like smash brothers and OoT but I think for me it was definitely "Morrowind" for the first time I felt like I was submerged in a whole new world and I could have a unique and varied impact on it.
Kill Caesar before the final battle. It does not really change the finally battle at all and you get to have the satisfaction of taking out "The Fort".
I have played all of them and feel that my favorite is still by far "Morrowind". Don't get me wrong i enjoyed "Skyrim" but feel it has been dumbed down and simplified for the masses and that if you made a mistake in "Morrowind" it had real consequence.
