Fallout 3. Seems appropriate for the described situation, and I could spend hundreds of hours in the game and never get bored.

Fallout 1 and 2 work fine on systems with low graphical capabilities. My system almost crashed when I tried loading Portal, but I've spent the last few days having a ball with the first Fallout. Half-Life. If your computer can take the Sims 2, it can handle Half-Life :)
