Dungeon Keeper 2 and Startopia would probably work, those are fun. You haven't mentioned Fallout 1/2 either so those are great too. Judging by what you've said it's probably a long shot but Morrowind or Vampire The Masquerade: Bloodlines might run okay.

monkey island and pokemon are the first games I recall playing as a kid, I don't think the feeling of achievement when I got my first pokemon to level 100 has ever been replicated by another game (it was a kabutops, though I've no idea why I chose a kabutops to level up religiously).

Yes! This moment was brilliant when I stumbled across it (the massive drop). Also Eldergleam Sanctuary is probably one of my favourite places in Skyrim, certainly one of the prettiest areas.
