Definitely NinjaBread Man. It could have been such an amazing game as a twisted and quirky platformer, like Psychonauts. I'm not particularly sure the gory hack-and-slash angle would have worked as well as a Psychonauts-like game. Just think of the possibilities for level design and scenarios...
