As previously stated you cant go wrong with Jedi Outcast and Jedi Acadamy for fantastic lightsaber combat. Heck in outcast there's a console command that makes it so that every swing of the lightsaber lops off a stormtrooper's arm,leg or even their heads and if that is not completely awesome...

Deathclaw Gauntlet Hands down. It looks cool,Ignores armor,and if you get lucky in Vats the killshot can send the ragdoll flying its truly a blast to use if you have the right skills buffed.
