Freelancer was packed to the rafters with eyecandy, but my favorite had to be in one of the Edge worlds (Tau or Omega something, I think) where you find a Neutron Star. That whole area was really pretty.
Also, the last level of Nexus: The Jupiter Incident.
Though Descent 2 provided me endless joy in my youth, I love it more because it spawned two of the greatest space combat sims ever made: Freespace 1 and 2.
Sins of a Solar Empire- Played the bajeezus out of it for three weeks and then just got bored of it. Then again, that's typical of me and RTS games, but even still, I rarely buy RTS games at full price.

In my opinion, the first two Fallout games are the two best RPGs in existence. They had a great story and were actually pretty fun to play. Plus, if you wanted to be an evil bastard, you could really be an EVIL bastard.
