Gameplay is all they need.
There's a reason I prefer jRPGs like Legend of Dragoon or Mario and Luigi to the typical "I may as well put in a DVD and mess with the menu" kinda jRPG.
A bit of a note on a trend in the industry now that I'm none too fond of is this "me too" multiplayer bandwagon we are seeing. Developers shoehorning in multiplayer simply to have it, and to silence the mouth breathing masses that whine and complain when a game doesn't. For some games, yeah...
And yet that is just not true. Ocarina was a great game, sure. But Majora's Mask is by far the best thing to come out of the franchise, LttP being second to that, and the rehashes (Ocarina being a rehash of LttP, and TP being a rehash of Ocarina) following.
Shadow of the Colossus, no contest. Some of the absolute best boss fights in gaming history.
Also have to echo those that have mentioned No More Heroes, the boss fights really made up for the lacking free roam mode. And Bad Girl was just...rawr.

Definitely the Brumak at the end of Gears 2. It just had a feeling of..what was the point? That should have just been a cutscene....and I don't often say that.
Also, really was disappointed with the fight with Skorge, though that wasn't an end-game boss fight, it was still damn disappointing.
Tank is the only that really provides a challenge.
Hunter: Melee spam
Smoker: Melee spam, breaking his tongue is far too easy
Boomer: Shove and shoot, if he gets you get in a corner and melee spam
Witch: Get behind her with the shotgun, and 1 shot her
The Tank, though lighting him up...
