Nevermind, just found it after searching multiple google pages! It's a Playstation game called Chocobo Racing!

Hey guys, I think it was either a Playstation 1 or 2 game or an old xbox game. But I'm 99% sure it's a Playstation 2 game. From what I remember it was a racing game. Some of the characters you could choose are a chicken with rollerblades/skates on and a pink haired girl on a flying magic carpet...
