I understand what you mean, but with the graphical capabilities of modern consoles graphics have become part of the immersion. In short, good graphics have spoilt us, we no longer find it as easy to relate to a game with sub-par graphics.

I'm thinking Sonic in a Shadow of the Collossus type world where he can run as fast as he liked in a an open world and can then harness his speed in epic bossfights that are in large arenas so there's no chance of having to look out for walls, also there should be less pitfalls.
