Video Games lost a huge degree of gameplay depth over the years in favor of a more cinematic, yet simplified gameplay.
Thief: The Dark Project is a prime example of this, in comparison to Thief 2014.

My answer is the same as OP (Skyrim). At first, I was enthused by all the different gameplay options but was later disappointed to find out that all of the tightly spaced dungeons in Skyrim's main quest made a warrior type the only viable option.
