I don't dislike FPS's per se...what I hate is being forced to use 1st-person perspective. I like 3rd-person where I can see my character.
For example I would consider Fallout 3 a FPS for all intents but since I can play in 3rd person I enjoy the game very much.

My opinion is that the at-launch DLC content for DA:O was mostly about marketing (reserve here get this, get the CE get this). I can't fault a company for creative marketing in an increasingly professional video game market where more often than not creators (or their publishers) are answering...
I like the idea of DLC. If you enjoy a game and want to officially extend the experience then the DLC is there for you.
Having said that I've gotten to where I just wait for Game of the Year (or something similiar) editions where I can get the original game and subsequent DLC all for usually...
I'd argue even before NWN 1 the Baldur's Gate series had Sequencer/Contingency spells and items.
Not exactly the same as Gambit and DA:O (definitely not as robust) but the same spirit I think.
And obviously the PnP version of D&D had those same spells even earlier.
The only game I haven't seen mentioned yet would be Vampire the Masquerade: Bloodlines. It's all about the atmosphere and story.
I probably spent the most time overall with Neverwinter Nights. The module system and editor were sheer genius. KoToR, BG II, and Planescape were brilliant as well...
