I don't think that was necessarily a jab at Ethan Carter, though I could be wrong. I think he was just using it as an example of a walking simulator with some actual challenge to it. After all he also lumped Stanley Parable in with the rest of them, then went on to praise it later.
Regarding the sounds Yoshi makes - I've always hated the sounds they gave him since the N64 with Yoshi's Story (which I never played). I know people are used to it via Smash Bros, and obviously the SNES was limited in the kind of sounds it could produce, but I really do think the SNES sounds...
