A quick recollection, I think the hardest bosses that I have not beaten, makes quite a big list (but only because I actively seek out things that challenge me): -Xemnas and the Knight boss in KH2 FM+ on the hardest difficulty. Even at level 99 with the best gear, I have yet to beat them...
