Because God accepted Abel's offering in a wholly remarkable way, while Cain's was left untouched. We haven't changed out of it because it's not in our nature, or rather in life's nature. Humans are a product of evolution, and the one defining fact about evolution is that it's a fight for survival, with the winner continuing to exist. And in truth, it's something that we need. The universe is a very dangerous place, and without those survival instincts that were bred by millions upon millions of years od beating the competition (whoever they are), we wouldn't likely have made it to this point in our existence.
