Baccano! A non-linear story set in the 1930's Prohibition Period that tells the story of seemingly unrelated characters clashing into each other. It is truly a ruckus.

Depends on what you want. For a more fantastical, over-the-top awesome series, I'd recommend Fairy Tail. For something to make you hate humanity, Elfen Lied. For something to watch a criminal versus investigator chess game, Death Note is awesome.

Only ever watched one anime series, because I usually don't like it very much.
That one series was Cowboy Bebop, and it was actually pretty damn good.
You've probably already seen it before, but if you haven't, give it a try, seeing as the recommendation's coming from someone who really isn't that big on anime in the first place.

I try to avoid really traditional recommendations like Cowboy Bebop or Baccano and such. For me, it always depends what animes they've seen and liked. I can't recommend an anime they've already seen or may not be their cup of tea. As for just general recommendations:

Darker than Black, Baccano!, Gankutsuou, Genshiken, Gantz, Cowboy Bebop, Afro Samurai, Berserk, Death Note, Neon Genesis Evangelion, FLCL, Gurren Lagann, Innocent Venus... That's all I can remember enjoying in the past ~4-6 years or so.

And if you're in the mood for some manga, check out Vinland Saga. Beautiful art, intrigue, war... Vikings. Good shit, man.

So you're not familiar with anime?

One word: Hetalia.

Episodes are only a few minutes long, and typically based, however tenuously, on historical events (one of my favorites is about the War of the Austrian Succession) and incredibly funny.

Other anime I don't much care for, usually because it's just so damn serious.

And (I don't want to get any quotes about how it's "NOT REAL ANIME!!1!") I highly recommend Avatar: The Last Airbender and the sequel series Legend of Korra.

Also if you want some light humour watch Hayate The combat Butler.

Depends what you're into really. I could recommend a lot that I've seen but if you're not into some of the themes in them then they may not be for you. Some I would say are good for just about anyone:

Full Metal Alchemist.
Baccano.


I know a lot more I would recommend but it really does depend on what you like.

I made a topic about this a little while back and people recommended me some that I'd definitely pass the recommendation on:

Ghost in the Shell: Standalone Complex (both series are great)
Fullmetal Alchemist Brotherhood
Neon Genesis Evangelion (make sure to watch 'The End of Evangelion' after)
Angel Beats! (the ! is actually a part of the title)

People keep recommending me Cowboy Bebop, but I can't find a copy anywhere in the UK...

My own personal favourites:

Darker Than Black (first series is better than the second by a long shot)
Elfen Lied
Code Geass (both seasons)
Death Note
Ergo Proxy
The Melancholy of Haruhi Suzumiya

I am currently watching a strange one called Texhnolyze, it's a cyberpunk series set in a somewhat ruined city where people with mechanical limbs are somewhat commonplace. It's interesting, but I wouldn't recommend it to somebody getting back into anime. It's quite slow paced and sometimes a little surreal.

I'd recommend Full Metal Alchemist Brotherhood, regardless of whether or not you've seen the original.
