For me, anything by Satoshi Kon: Perfect Blue, Millennium Actress, Tokyo Godfathers, Paranoia Agent, and Paprika.

Oh, and definitely Evangelion (if you couldn't tell, I like a nice mind f*ing with my anime).

I'd nominate Elfen Lied for that title. While Higurashi's violence clashes more with its setting, some of the stuff found in Elfen Lied is downright unpleasent, to the point that it actually bogs this otherwise excellent series down (though not enough that it shouldn't be watched by those who can stomach it).

OT: Of the mere five I've seen, it's definitely "Spice and Wolf". Assuming that "Ultimate" is utterly subjective, that is.

My favorites would be Hades Project Zeorymer, Welcome to the NHK, Shin Mazinger, Astro Fighter Sunred and Gundam Unicorn. Kind of biased towards mecha there =/ but Gundam Unicorn is just so good for only a single episode so far.

I am not generally an anime fan, but Cowboy Bebop blew my socks off. Arguably the best music of any animated feature, ever.

I also enjoyed Azumanga Daioh, Fullmetal Alchemist and season 2 of Rurouni Kenshin.

fooly cooly is my all time favorite, followed quickly by gurren lagann. it took me years to fully decide which i liked more but these days i stick with fooly cooly.
if you consider yourself a fan of anime you have to watch both of them.

Aside from most Gundam Series, I like Desert Punk, Samurai Champloo and Cowboy Bebop.

Now Anime movie! Nothing can top: Lupin III: Castle of Cagliostro! Made by Hayao Miyazaki in his Early days!

For me, both gigs of Stand Alone Complex take the cake. Cowboy Bebop also has many things to recommend it, however.

Legend of the Galactic Heroes
110 episodes of epicness. It's like Romance of the Three Kingdoms x Star Wars with a Prussia/Austria inspired Empire versus a western-styled 'democracy'.

There's nothing like it. Although series like Code Geass seem to be inspired by it, it's not nearly as good.

I have to agree with Gurren Lagann... Mainly because it did everything I did not expect, and the pacing completely mindfucked me.

For me, it's got to be Wolf's Rain. It was my first anime (minus ones when I was a kid, like Sailor Moon and Digimon) and it's still my #1 favorite. I just love the story, the characters, everything. The last two episodes still make me cry. xD
