I made a bit of a mistake when shopping today, I bought low fat cream cheese instead of regular. Any bakers on the site who can tell me if the cheese cake I plan to make with this will still turn out?

Low Fat cheese can be used for cheesecake just as much as normal cheese from memory shouldnt be any adjustments needed.

Prep Time :25 min. Cooking time:1 hour 10 min.
Preheat oven to 325 F
CRUST
1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons butter

Mix crumbs, sugar and butter;
press into bottom of springform pan.
Bake 10 minutes.

Filling
4 (8 oz.) pkgs Cream cheese, softened
1 cup sugar
3 tablespoons flour
1 tablespoon vanilla
4 eggs
1 cup sour cream

Beat cream cheese, sugar, flour and vanilla at medium speed with electric mixer until well blended. Mixing at low speed, add eggs, 1 at a time, mix until just blended.
Blend in sour cream; pour over crust.
Bake 1 hour 5 minutes to 1 hour 10 minutes or until center is almost set.
Run knife around rim of pan to loosen cake; cool before removing rim of pan.
Refrigerate 4 hours to over night.


This is almost word for word the recipe for new york style cheese cake (brand names removed for convenience sake) from the "Ultimate Kraft Philadelphia Cream Cheese Cheese Cakes" book. If I'm not mistaken it's from 1995.

Make it like a normal cheese cake. Then fry it in butter, there now it is high fat again.

Or you could just add chocolate, or some kind of fruit sauce, or be all healthy(ish) and just make it like normal but it will lack some of it's flavor.

It should be fine. This is a cheesecake we're talking about, it's not like a normal cake where there's a complicated and easy to mess up chemical reaction going on. And even if it were, a little bit lower fat content wouldn't make a big difference; that's why you can use pretty much any kind of cooking oil you want when you bake a cake. My dad made a chocolate cake with olive oil once. Aside from tasting like it had been made with olive oil (which in his and my case, was a good thing; my mom and sister didn't like it), it turned out just like any other cake.

it probably won't be as good, but it's not like low fat cheese cake will cause people who eat it to have Xenomorph Chest Bursters popping out of their chest at the dinner table.

I actually don't think the fat content of your cheese will have too much affect on the overall result.
