I love spicy dips for my nachos but the store bought stuff is pretty bland. So I make my own (Recipe below).
It's great, add it as a sauce for almost anything, use it as a dip, eat it from the jar with a spoon...
So what's you perfect food?
-------------------------------------------
Scubamike's Salsa
2x 700gm jars of pasta sauce (Cheating I know, but easier than putting 1.5kg of tomatoes in the blender I don't have)
200gm fresh coriander
4 cloves of garlic
1 onion
2 capsicum (green or red)
400gm chillis (I like the red ones from Matakana, NZ)
50ml lime juice
Finely chop the coriander, onion, garlic, capsicum and chillis and put in a large pot.
Pour in the pasta sauce and lime juice.
Bring to a slow boil and simmer for 15 minutes.
Pour into jars, leave a centimetre at the top so the lids can pop down as it cools.
Enjoy!
