Personally, I would like to see Morrowind remade with a simple graphics layover, whilst keeping the gameplay and variation of objects the same...
Aren't there mods for that already?
As for Daggerfall, I'm not sure how feasible that would be, due to the sheer size of the game world. Seriously, that place is
huge. And when I say huge I mean
oh my goodnes, that's fucking huge huge. And to say nothing of dungeons, either...though, making "HALTHALTHALT!" a bit less obnoxious would be a rather decent change.
Yeah you have a point there with Daggerfall. But isn't Morrowind smaller than Oblivion in that sense?

Why waste time and money remaking older games?
People complain about a lack of originality in the industry but want older titles to be remade?
No wonder publishers don't know what gamers want.
We don't even know what we want.
Well, these games are darn near classics, and really can't be played using modern tech anymore (at least not without extensive tutoring on how to pleasure talk a Dosbox into playing the damn thing for you). The problem with the lack of originality in the industry is not that the game/genre/etc. is being put out again, it's that it's being put out too badly and too extensively(at least that's what I think). But those games usually don't last very long... Anyway, I'm talking about these games, because A. It's really hard to find good copies for a console, and B. The Dosbox is giving me hell, but that's a story for another time, and other things- I'm rambling again, darnit...
