I just posted about the creepiness of the GUILTY SPARK level in the first HALO game, and I also mentioned that the level previous to that, ASSAULT ON THE CONTROL ROOM, is one of the best levels in gaming history - and I stand by that.
The level has everything - a different glimpse at the ring-world's weather systems (you find yourself in snowfields), use of ALL the vehicles in the game, some absolutely kick ass and memorable battles (when you first come out into the snow and the marines are pinned down by the flipped warthog - that battle is epic, especially on legendary) and its fun all the way through.
That battle in the snow also shows off how smart the AI in the game is (the enemies really react to what you do, as opposed to battles in games where they just send mindless enemies at you over and over), and how the processor could support everything going on.
Truly masterful level design.

The DMC mundus fight.
The covenant from halo 3.
test lab 19-end in Portal.
The second sneaking followed by escape mission from BG&E.
The one where the player kills demetri on the boat in GTA4

On the subject, I enjoyed The Library from original Halo.
You enjoyed the library? That was the level that has stopped me from ever finishing the game. It's an hour full of repetitive grind.

Having said that my favourite levels from games would probably have to be Waterloo World in Psychonauts, Arcadia Glens in Bioshock, and the Hollywood hub in Vampire the Masquerade Bloodlines; simply because it oozes atmosphere.

All ghilled up in CoD 4. Not played Psychonauts so can't say anything about that.
Oh, also the Ikana Canyon temple in Majora's Mask.

I'm not entirely sure why, but the finale level of Blood Toll in Left 4 Dead seems so much more epic than any of the other ones to me. Though the finale in Death Harvest is a close second.

Also, I quite enjoyed the Paradise Lost level from the original Crysis. It was pretty sweet seeing the entire island frosted over, as compared to the lush jungle you fight through throughout the first half of the game. Though, again, the grand finale of Crysis, when you're on the carrier, is amazing. The open sky visuals really give you a huge sense of the epic battle you're fighting.

Intestinal Fortitude on Gears of war 2. Not much action, but still a good idea for a level.

If only there was a multiplayer map set inside the worm.

Hill Top Zone (Sonic the Hedgehog 2) - Back when my only console was my brother's old Sega Genesis, this was my all-time favorite level. For one thing, I really liked the music. Also, I found the scenery to be a very cool change of pace.

Rock It/Pack Attack (Crash Bandicoot 2) - For a lot of us who'd seen Crash 2's ad campaign, these were the levels that the whole game was building up to; the Jetpack levels! Sure, the controls were a little clunky, and the levels themselves were really pretty short, but they were enormous fun.

Flame Mammoth (Mega Man X) - This is the stage where you can find Mega Man's X Buster upgrade, so it was always the level I went for first. Also, I loved the moving conveyor belts for some reason.

Assault on Hoth (Star Wars Battlefront II) - It's a battle we've all played countless times by now, whether as Luke Skywalker, a nameless Rebel Pilot or a sinister Imperial Officer, and yet somehow, I never really get tired of it. Part of the appeal of the Battlefront II version is that it's not at all like the movie version; sure, there are snow speeders flying around, and you can take out an AT-AT using tow cables, but the real fight is happening on the ground, where the soldiers are.

I liked the Worm Level in Gears of War 2. For the reason that i got to
sever giant arteries with a chainsaw.
