I would like to point something out here.

Not only was FFXV a pretty damn decent game on launch, even if you didn't think it was great it was still at least decent. On top of that Square is actively updating the game to fix issues and add content to it, a lot of which is coming for free. Which is incredibly awesome. They are increasing the level cap to 120, providing some Magic fixes, and are talking about adding a "free drive" mode to allow people to drive the car anywhere!

Not to mention completely overhauling chapter 13 and adding in the episodic DLC as well.

I'm really happy to see the continued support of the game and I feel like it will end up in an awesome state.

Not quite. Sephiroth has cells inside him from the extraterrestrial entity Jenova (who he considers his "mother"). It is Jenova which skipped from planet to planet, destroying and moving on, before it was defeated and sealed away dormant on Gaia (the planet of FF7).

Jenova is reawakened and released during the events of FF7, and aids Sephiroth. But, nothing really indicates that Sephiroth shares his "mother's" desire to destroy the planet and move on. He seems to want to absorb the Mako energy and become a god.

Ultimecia is not the one sealed away in space; that's Adel, the former ruler of the nation of Esthar (and a secondary antagonist). Ultimecia frees Adel so that she may possess her.

Ultimecia resides in the far future, and only interacts with the "present" by throwing her consciousness back through time, and interacting with the past by possessing others.
In advent children when sephiroth reawakens he plans to do exactly that. He plans to use the Geostigma people to essentially corrode the soul of the planet and then use the husk of the planet to travel across the cosmos and become the Silver (haired) Surfer.

Oh gawd. I have seen Advent Children, but had forgotten it. That... sounds bad.

and while it is all very noble of them to say that they are doing this, when I actually see the free content being rolled out I will believe it, anyway. Yeah while noble of them to say they will do this this game took ten years to make. Ten years, how long will we have to wait for these new story elements to appear? Will it really be free or will we have to pay for it, the game could have had a huge and more detailed back story but Square decided to cut all that out and release it as a paid for movie, who's to say they won't do this with the whatever new 'story content' the game is getting.

What about those that have played through and completed the game? I have no desire to replay the game again and that's a month after release what happens when they finely release the reworked story and ending three years down the line. Will anyone care still?

As for reworking Chapter 13, here's the thing, Chapter 13 was a bit of a shit show, but EVERY FF game has at least one section that makes you want to scream a bit, what is bad about Chapter 13 is that you are rail roaded in to it with no option, it is the only path you can take once you start the linear sequence of events that leads through to the end way way back at Chapter 8. If the player had had free roam choice right up to Chapter 13 and then again after that then it wouldn't have been such an issue.

Oh, it's way more convoluted than that.

If I remember correctly, it was Adel that was sealed in orbit around the moon. Ultimecia is another sorceress from the future who travelled back in time and possessed Edea and later Rinoa to engineer the events that lead to Adel's freedom, so Ultimecia could then possess Adel, in order to gain enough power to use Ellone's ability to send people's consciousness further back in time than Ultimecia herself can. For some reason, this allows her to compress all of time into a single eternal moment and all of it because of a prophecy that stated Ultimecia would be defeated by SeeD. Of course, this actually led to her fulfilling the prophecy because the time compression allowed the party/SeeD to reach her.
