Food is fun, and making it can be too. So lets post some recopies of stuff we like to eat and drink, and maybe some experiments we were trying. Anything food and drink related, and stuff you want to try or tried doing.
I just tried this today from scratch and was making it up as I went BUT I think I did a good job with this. A few more tries and I will have it refined.
Orange Stir Fry Chicken (note, I am eye balling this)
What you need: A few pounds of chicken
2 Bell Peppers (preferably Orange and Yellow for color)
Sliced Oranges/Tangerines (canned or fresh, in this case I used Mandarin Oranges.
Orange juice and/juice from Canned Oranges
Some Other assorted vegetables (I had dice up some black olives, and asparagus).
Step 1. Cook Chicken on a grill first. Careful about cross contamination as chicken is notorious for salmonella. Once it looks mostly cooked, or cooked depending on how thin it is, put on a plate and set it aside. If its too greasy for your liking, you can put napkins above and below them to absorb some of it. Also may put some orange juice on it while cooking. Next time I will try marinating it in it for a day or so to see what happens.
Step 2. Dice up two bell peppers. Cut a circle near the top to remove the seeds and stem (seeds can be planted latter). Cut them into small strips or dice into little squares, depends on how small you want it and if you are using a fork or chopsticks. Regardless put the diced pieces in a container.
Step 3. Dice up about 5 or 6 stocks of asparagus. Also put into a container.
4. Cut up a handful of Black Olives. Since the asparagus didn?t take up as much room as I thought it would, I stuck this in there.
5. If you are not using already cut oranges, start slicing them. Make them about bite size if you can. If in can just open it. If not, put in another container.
6. By now the chicken is probably cooled down. Beguine cutting the chicken into smaller chunks, again bite size preferable.
7. Put into a skillet, add in the ingredients. You will want to add in just enough orange juice to souk in the bottom of it, like a small pond of it. For more flavor, I also put in a touch of Chinese sweet chilly sauce.
8. Put on medium heat and stir around for about 15-20 minutes.
Serve with rice and you are done. Enjoy.
