What are some?

One of my favourites used to be the wizard cards [https://www.youtube.com/watch?v=QDUv_8Dw-Mw] you could get from exploration in Harry Potter games. Each one had a little descriptive bit of text about the pictured wizard, witch or fantastic beast, narrated by Stephen Fry. Or someone. But probably Stephen Fry. I don't remember very well. I think that if you got enough of them, you could go to the Bonus Bean Room or something like that.

I'm also partial to the Skyshards in ESO, because they also give you something of value for locating them (skill points for every three) and there's usually one in any boss dungeon. They may be one in every dungeon, I don't remember. It's only 1:00 and I feel like I have the hangover without the pleasure of drinking first.

I have a feeling some people may disagree but I always loved collecting the Riddler trophies in the Arkham series.

I actual feel its quite ingenious how they managed to incorporate such a standard video game trope of collectibles and giving it a "believable" reason to exist in the game world and also tied to Batman canon.

Those run away orbs in saints row 4 and gat out of hell were pretty fun to chase at breakneck speed through cars, pedestrians, schools of innocent wee children and buses of vacationing OAPs in a beeline effort to gain a little addition to the experience pool. All in good fun.

I'm that one person who honestly has more fun collecting Riddler trophies than fighting dudes. Predator bits in Arkham are find but I HATE the combat system in Arkham...Riddler trophies on the other hand? I have a lot of fun finding those things.

It doesn't really count as a collectible since you absolutely need these to not die but I find it incredibly satisfying to find fruits in Pikmin 3. I don't have much experience with the first two Pikmin titles (I should really dig out the first one...) but I played a lot of Pikmin 3 and every time I found I could get to and collect a fruit my heart skipped a beat and I felt genuinely giddy. The true reward though comes at the very end of the day when that juice gets poured into the glass containment jars.

Agree with the riddler trophies...they represented individual challenges and were tightly contained. Until the blasted batmobile got in the way! *Frowns disapprovingly*

Now...this may be cheating...but abzu. You were not obligated to catalogue all of the life forms within, but it sure felt rewarding to discover them. You receive nothing but their name and a quickie close up if you're feeling extra pervy. No copy paste collectables with no meaning, or something you got to read in an intimidating encyclopaedia with a highly unenticing "157 unread text dumps for you, squire."....No!!, These are real creatures right in front of you doing cool creature stuff and you happen to be the first poor sod who pervs upon them. Ok, it is a bit weird how you somehow already know their special names, it's still uncertain if the playable character speaks at all. So who is naming all these? Is the main character hiding information from us?? Treacherous bastard. I was really growing to like that humanoid feline entity.

Beyond Good And Evil...loved the continual side quest of photographing new creatures and sending them off to the laboratory for evaluation and sweet experience points. Almost a Metroid Prime-esque Zen to be had from cataloguing the wildlife between whatever you happen to be doing. This probably says more about me than the games, but screw it...that's some attention to world building we need so much more of! I will be severely disappointed if the sequel skimps on that mechanic. It was like Pokemon snap but without the contrived Pokemon crap. ;)
