Have you ever played a game that is still fresh and fun the day you first played it? Are you willing to take a chance and say it will stay that good for as long as you live? Talk away!
Mine are:

Portal: Even though it copied it's game mechanic from Narbulac Drop, Portal is a game liked by everyone. Short and Sweet, we all wait in anticipation to see if Portal 2 will met it's fans unreasonable standards.

The Neverhood: Some impossible puzzles, but nonetheless, a fantastic point and click adventure game. Great art style, quirky setting, and a great ending.

I know I could name more, but I'd hate to ninja all the options.

Planescape: Torment. The graphics might have aged, but the story, oh the so very awesome story haven't and probably won't, ever.

EDIT: I'd also like to add Half-life 2, favourite game of all time. The atmosphere and the masterful storytelling will remain, atleast for me, even though the shooting and gameplay will probably be outdone, if it haven't been already.

The original Legend of Zelda still holds up to this day. I don't care if, by todays standards, the graphics are shit, or you absolutely NEED a map, due to the lack of in game direction, I still think it's a damn good game that still stands up. For that matter, so does Ocarina of Time. Hell, I just love the Zelda series.

Goldeneye is still amazing despite all these years.

I've played Super Mario 64 so many times, on the N64 and the wii.

Final Fantasy 9 and Metal Gear Solid are the two most amazing PS1 games, in my humble opinion. I still enjoy playing them to this day.

Starcraft and Dungeon Keeper are from my early PC gaming days and i still enjoy playing those when i can get them to work.

Also, Space Quest and Police Quest were amazing DOS games.

Metro: 2033. It will never fail to deliver a fun and intriguing storyline, even if the gunplay does get a bit old after a few playthroughs (I'm currently on my 4th :p).

X-Com, because it pretty much founded Tactical Strategy games.

Shogun: Total War, because it created real time battlefield strategy.

Master of Orion, all three, because they created the 4x strategy game.

Steel Panthers 1 & 2. Turn based, but wonderful fun.

Definitely have to agree with A Link to the Past and Goldeneye 64, also wanna mention Chrono Trigger and Super Mario RPG.

GTA San Andreas because of its story but some people would not agree with this

Red Dead Redemption simply because its a great game that went past the traditional shooter with their machine guns hight tech armor and weaponry and just went with a great western

METROID PRIME

Great gameplay, pretty much gaming in it's core. Great artdesign, leveldesign and decent graphics for it's time (put the disc in and play it now, it still looks amazing). Great attention to detail. Sharp writing paired with smart storytelling.

It was just a great game, the best imo, but atleast one that will forever be playable and great.

Games with more stylized/artistic graphics tend to hold up over time much better than ones going for realism. Okami comes to mind as an example, although there are a ton more.
