Played oblivion on easy for first few play throughs...currently on a new play through default difficulty no glitches...Much more difficult than anticipated.
Lots and lots of RTS's. I love 'em, but seriously? I suck at them.
Also, Half-life 2 and Left 4 Dead 2. Not because they're hard, just because it's fun to have the enemies die a little easier.

Bioshock so I could get through the awful gameplay bits to get to the brilliant story bits quicker.
Dragon Age: Origins. I just...had to. I would've played it on Normal if the friendly AI wouldn't be so thick. Yes guys, those jets of flame in your face do indeed come from that pressure plate your standing on. Yes get away from them. No don't walk over them again dammit!! Death ensues.
Other than that, I might put an RTS on Easy. I played Need for Speed: Shift on Easy for quite a while too. I love racing games, I love the adrenaline they give, especially Shift is epic. But no other genre can raise my blood pressure that much if it goes wrong.
Other than that, Normal or even Hard all the way. I barely play any FPS singleplayer campaign below Hard nowadays.

I eventually turned the difficulty slider all the way down on Oblivion because I didn't really like the combat. It seemed on a higher difficulty I just burned through healing items faster. I really liked playing that game for the atmosphere, exploration, and story for the most part.

I try to play games on normal every single time, the difficulty it was intended. The only game I didn't do that on was Fallout 3, which I had to make it a little easier on myself, that game is a tough one when you first start out, no decent stats, weapons or health. Your practically screwed
Silent Hunter III, can't bear to face manual firing solutions every time I take a shot, I do enough trig with work as it is.
Halo 3. You want an unrealistic shooter where you can run right up and punch the aliens in the face until they die of face punch? Play on easy. That's where the fun is.
Oblivion on easy first go, until I realised bows aren't viable. I play minecraft on easy because I need to grow a pair about losing all my stuff. Also, MW2 SP. Fuck me 'Takedown' is unfairly hard compared to everything else. Mother 3 I farmed the black bean that gives tons of exp because I'm terrible at JRPGs, and no will to want to become good, but Mother 3 is a special exception. And yes I'm a terrible gamer, I'm cool with that.
