This has probably been done a million times before but what the hell.
For me its got to be;
The original Gran Turismo, those damn licences!
Rayman, I don't think I'll ever finish that game...
More recently, I'd say the first DMC was pretty hard, even on normal mode I had a lot of trouble beating nightmare on the 2nd and 3rd fight.
Also surprisingly I found FFXII very hard in places, though that was probably because I accidentally missed a whole load of side-quests and spent most of the game on a way too low level.
What about everyone else?

G-Police on the PSX. It has been a while since I have played it granted but I could never get past level 17. I just couldnt work out what to do.

Also, Homeworld has a nice difficulty streak to it in the gardens of kadesh when you play through first.

Whenever one of these comes up, I always go to my old standards of:

Hardest = Battletoads on the original NES
Easiest = You Have To Burn The Rope

But I always say those. Let's say, excluding those, games in the last five years, assuming the normal difficulty setting.

Hardest: My first thought is to say Ninja Gaiden 2, but that was more frustrating then hard, and I beat it in under ten hours. Oh! I know! Alien Hominid HD on XBox Live Arcade. I still can't beat that thing all the way through without running out of continues.

Easiest: Oh god, pick one. We'll go with Bioshock or one of the Lego games, I suppose, as I don't think it's even possible to lose them.

Oh yes, forgot to include an easy game or two.
Can't go wrong with pokemon snap, great game but I completed it in about oooh 3 maybe 4 hours?

Ninja Gaiden (Xbox) or the original Prince of Persia were my hardest, I can't think of any other games that are so unforgiving.
Easiest? Lost or Mario Kart: Wii come to mind, it's actually really hard of thinking of the easiest game I've completed. A little ironic methinks.

The hardest game I can remember playing is Commandos: Behind Enemy Lines. That being said, I still love it unconditionally, even though I never got to see half the levels!

I don't often complain about easy games, as long as their fun, and I don't generally buy the ones that aren't, so I've got nothing for that...

My hardest would probably be Winback: Covert Operations. This may be sad, but I couldn't even get to the final boss battle.

Easiest? IDK. Possibly the NFL Street Series.

Hardest: I want to be the guy.

Easiest: You have to burn the rope.

But then again both of those are built specifically to be the hardest and easiest game ever made... Realistically...

Easiest: Portal. It doesn't detract from it being absolutely fucking awesome, but it is really easy all around.

Hardest: Mhhh...I haven't played too many single player games lately... Nor have I found the ones I played particularly hard... Maybe the original Ghost Recon due to the hillariously bad graphics attempting realism, where you'd usually die from an enemy you couldn't even see outside cause of the bad graphics..

Hardest game would be Timesplitters 2. It kicked my arse on anything other than Easy mode. It was also one of my favourite games ever.

Easiest might be Mario Kart: Double Dash.

Do web based puzzle games count, because I just remembered 'not pr0n', at some point it was taking 4 of us 6-10 hours to figure one level out. Great game, though

I think Portal was a particularly easy, but incredibly enjoyable game, don't think I died or failed a puzzle all the way through first time.

Overall I think Halo 3 was stupidly easy as well, even the legendary difficulty wasn't a great step up from some of the lower ones.

For hardest, Hitman 2 was insanely difficult for me when I was trying to get silent assassin ratings without using walkthroughs, cheats or gamefaqs. But it was hard in a fun way though, in that it never made me want to put the game down.

Civilization 4 on deity, I think hands down that is the most impossible thing to beat.

The later stages of Worms: Armageddon were pretty hard as well.

Easiest: Need for Speed Hot Pursuit

Good call guys. It took my friend and me so long to do the first level on hard. By the time we completed it, we were both in perfect sync with the game for the entire level, no damage taken or shots missed until that helicopter at the end.

Hardest: Can't say really, I don't go out of my way to get hard games. I've beaten every game I own (and some I don't), so, Ninja Gaiden Black?

Easiest: A cross between Fable, Oblivion, Bioshock and the Sims.

Okay...hardest would have to go to either Ninja Gaiden 2 (I don't care what anyone says, I can't even complete it on easy!) or failing that...Corperation for the Sega Megadrive (it wasn't even clear what the controls were half the time, never mind what you're supposed to be doing or where to go).

Easiest, let's start with Resident Evil 3, they give you the option to begin with every non-super wepon in the game and a medical box that holds 3 First Aid sprays, and to top it off, infinate saves. Runner up for the easy award goes to Elder Scrolls 4: Oblivion...especially when you consider what the game is like with the difficulty turned all the way to the bottom and the fact that you can complete the entire game at level 1 (in short, the bad guys are essentially armed with rusty cutlery)

Anyone who says FFX obviously never tried to fight the bonus monsters at the calm lands.

The hardest game ive played is Super Ghouls and Ghosts. It took me a week to get to the 2nd level! The hardest one ive finished is probably Viewtiful Joe, maybe even Half-Life.

Easiest is trickier. A Quite easy game is FF9, i didnt die until well into Disc 3. Of course the last boss can one hit kill you, so its not the easiest game ever i wouldnt say, just i cant think of anything easier.

Oh and im in agreement about TS2. That first level on Hard is ridiculous. I too have memories of working together to try and finish it. We failed though
