Well I don't find these boring or meaningless but if you want to watch a bunch of people talk about philosophical stuff for a while Before Sunrise, Before Sunset and Waking Life are up there for sure.

You can try "Burn after Reading" or "Being john Malkovic"
I don't think that they are boring but very mellow and dialog heavy, and interesting.

There Will Be Blood, possibly one of the dullest, most overrated movies of last year. There's one big explosion that might upset your vibe, and there are a couple of scenes where Daniel Day-Lewis really gets into his excellent performance, and gets loud. But if you want long, slow and boring, you couldn't do better than that.

Well, maybe The Assassination of Jesse James by the Coward Robert Ford, but even if that one needed a couple o' cuts, I kinda liked it.

EDIT: If we're talking movies that are dialogue-heavy, but not necessarily boring, try The Taste of Tea.

EDIT #2: The Fabulous Baker Boys. Not boring, but definitely mellow, and really dialogue-heavy.

One of my favourite movies of all time. It fits the description of the OP pretty well though, but you generally have to think about what they say so it requires an attention span which isn't ideal for the kind of movies you're looking for

Casablanca... it sounds interesting in theory... but then whenever I try to watch it (which is never, because it's just too boring.) I get bored of the idea and never even bother to so much as contemplate renting/buying/pirating it.

Yeah, when I'm really tired I just pop in Burn After Reading, and I'm usually gone in a few minutes. I mean sorry if I'm offending anyone but that movie is boooooring.

Well only when I want to sleep.

The movie that puts me to sleep always seems to be Spiderman 2. Whenever it's on I just get sleepy and pass out.

Other than that, I can't think of any movies.

I actually quite like dialogue heavy films, if done well at least. But if you want to watch a really boring film, I'd suggest Good Night, And Good Luck. Nothing happens in that film. At all

I fell asleep about three times during Stephen Kings "IT" it's kinda scary, I guess.. But it's REALLY long and half of the movie is just small kids.. who are geeks. And when they grow up they talk to eachother, alot.
I mainly bring up this movie because I was in kinda the same mood as you when I watched it, and it worked perfectly.

The ending to 2001: A Space Oddysee. Well, that might not be so bad baked.....
I saw it sober, and I dug it. I think this is the one for you, though. The first "act" with the apes and the monolith you can skip, but everything after that is just what you're looking for.

EDIT:

No way. I've spent my entire life trying to combat boredom. I'm not gonna bore myself by choice.

This is what you're looking for.

A movie with no conventional plot: merely a collection of expertly photographed scenes. Subject matter has a highly environmental theme.

I was ready to hit you until I saw the second sentence.

I would have to agree with the Great Escape, a film I enjoy when I am in the mood for it - the particular mood you seem to have described. Enjoy!
