Why is it when the PS3 has bluetooth and whatever wireless the 360 uses for their controllers and accessories third party products alot of the time are wired or use an USB dongle?
Here is an example. Recently I was at a friends party and he decided to bring out his Rock Band stuff ( 2 guitars drums and a mic ). It took forever to get everything set up properly and the crap hanging from the front of the PS3 was pretty lame. It would have been nice just hold the home button and start playing but we couldn't.
There has also been a couple of controllers I almost bought but didn't because they were wired or used a dongle.
Is it a money issue, first party restrictions? I just don't know and am completely dumbfounded why a feature isn't taken advantage of.

Money issues. Built in bluetooth, in particular, is somewhat expensive, especially if your entire gameplan as a third party manufacturer is to undercut the first party prices. Its cheaper to rely on older wireless tech.

Pretty much this.

The reason third party hardware is cheaper is because it's inferior.
