Macross, perhaps? I spose it's more starfighters + mechs, but it might interest you? If I dig up anything else, I'll post.

I would say Robotech/Macross is your best option.
Just be careful what you find. You are looking for this:
But in the west there are several series that were imported as sequels to Robotech that have nothing to do with it...

Well, there's the X-Wing series of novels. They're easily some of my favorite Star Wars "Legends" books, particularly the ones written by Aaron Allston. Warhammer 40k has Double Eagle, written by Dan Abnett (author of the fan favorite Gaunt's Ghosts series).

Is there any reference of Jedis and the Force in the X-Wing series of novels because really Jedis, Lightsabres, and the Force are the actual face of the whole Star Wars franchise. More so than Space Ship battles and planetside battles.

Researched it already, barely any space fighters, most of the battles revovles on large star destroyer like battleships.

Think Star Trek Wrath of Khan basically.

Practically none, which is part of the reason why I like them so much.
There are a few characters that turn out to be Force sensitive, but the narrative doesn't really explore it all that much.

Many of my favorite Star Wars stories and characters have little to no Force shenanigans involved. Jedi and lightsabers are cool and all, but I've always been a starfighter jock when it comes to Star Wars. I was that one weird kid who wanted to be Wedge Antilles while my peers fought over who got to be Luke or Vader during Star Wars play sessions. I also prefer "badass normal" heroes that rely on training and ingenuity to overcome obstacles rather than some innate power they're lucky enough to be born with.

There is a tv show from the 90s called Space: Above and Beyond, which focuses on a squadron of Marine starfighters. It's alright. But your best bet is probably Macross, though even that is more Top Gun.

Another vote for macross, as It does featuer transforming fighters.

Not quite what your after is Last Exile - no space battles, but their is aerial battleships and dogfighting, politicking, a retro aesthetic, though some decidedly unusual aspects to the world building.

For example, battles follow strict rules and defined procedures - the first exchange is initially musketeers on platforms deployed from the battleships sides exchanging gunfire, and only if there is a not a clear winner, does it move to a full fleet battle. It's a plot point that in an early battle the technology controlling Guild turn a blind eye to one side breaking the rules, because it's in their interest to have that side win.
