Add Xenoblade Chronicles to that for the Wii. For the PS2 if you find a copy of Odin Sphere buy it immediately its an amazing game. Though there's a lot of games on both so you are going to get a metric ton of suggestions for both so good luck deciding.

Metal Gear Solid 2 is a must have, and if you're going for Metal Gear Solid 3, get the re-release called Subsistence, it has a way better camera system and adds quite some more stuff to an already awesome game
except for the multiplayer
it's not that it's bad, it's just that it's dead XD

I have to vouch for Okami, as that game is simply awesome, and also Shadow of the Colossus (though I haven't played it) because it is something I have always wanted to play.

Here's my list for the PS2:

Devil May Cry -- the story of the games is pretty badly executed, but they are really fun and I love the style, even though they're hard as fuck.
Final Fantasy X and XII -- If you enjoy RPGs, I think these are a must.
Rogue Galaxy -- a fun RPG that not many people seem to have played.
Star Wars Battlefront 2 -- a game that I spent many, many hours playing.

Wii:

Super Smash Brothers Brawl -- a beat-em-up fighter that never gets old.
Monster Hunter Tri -- a franchise that will probably suck your life away, and you will love every minute of it.

Resident Evil 4. I'd recommend you pick that one up for the Wii. I also recommend that you get the Wii version of Okami; the motion controls compliment that game's painting mechanics very well.

As for the PS2, Bully is about as good as it gets imo. It's pretty easy and starts slow, but it's crazy fun and has terrific characters and humour. I also have to second Viewtiful Joe. Other than that...the PS2 has so many quality titles I doubt you'll need me to help you find them.

You have very good taste. I imagine zelda twilight princess and skyward sword will keep you busy for a very long time! I would have to second Odin sphere as I found the game had both excellent art style, gameplay and story. Also, the jak trilogy holds up pretty well.
