Legend of Zelda: Windwaker, F-Zero GX, Metroid Prime, Katamari Damacy, Psychonauts, Mario Sunshine, XIII, the list goes on. I love the greats of last-gen 
I've been going back and playing what I've been told were golden PS2 games. So far on the list iiiis:
MGS 1-3
Shadow of the Colossus
Resident Evil 4
Prince of Persia: Sands of Time
Also, I've been playing Prince of Persia on my computer and I reaaaally wanna know why the prince ALWAYS moves in slow motion. Like it's soooo annoying.

Resident Evil 4 and Shadow of the Colossus for me too. As well as FF 1-4, Devil May Cry 1-3 and KotOR 1 and 2.
I play more last gen games than current gen (discounting the copious amounts of DS I play). I play through several different Final Fantasy titles now and then, having just re-finished both 7 and 10 and in the middle of replaying 8 and 12. Add that to some Gamecube gems I pop in like F-Zero GX, Tales of Symphonia and the technically last gen GC Twilight Princess (which I found much better than the wii version). I have a few GBA games I play now and then as well like Golden Sun and the 3rd Gen Pokemon games. I've got a backlog of PS2 games as well that I have and am going to play through or finish eventually. Stuff like DMC 1&3, Xenosaga and Killer7.
I don't tend to stick to last gen out of a "they are better" mentality, it is really more of a "I don't have money for new games all the time" thing. By the time I play most things they have been out for some time. Plus I gen a lot of enjoyment out of replaying games and trying new things or showing them to my brother and sister whenever they come over, since they are now old enough to start enjoying games with story emphasis.

MGS 1 - 3, Timesplitters 2 and Rachet & Clank 2. Those were the days before I became an overserious gamer who complains if my team loses in COD or gets annoyed with people who roll need on my gear in WoW ;p
So many I can't even list. Recently, Kotor 1 and 2, Thief: Deadly Shadows and the resident evils on the gamecube.
Because of The Orange Box I can play Half Life 2 without the inconvenience of having to dig out old games/systems. I was actually planning on doing a Half Life-a-thon soon, and I dug out my PS2 and Half Life 1 just for that occasion.
I also play Pokemon Snap on the Wii once in a while for nostalgia purposes. Plus it's a super short game so I can beat it in like 15 minutes.

I have yearly playthroughs of Deus Ex, the Baldur's Gate Trilogy, Fallout 2 and Vampire: The Masquerade Bloodlines.
Sometimes it's a little more often if I find some new mods to spice things up, but usually it's like clockwork.

I usually dig out POP: Sands of Time, Legacy of Kain: Defiance, God of War, SW Battlefront, Kotor 1 and 2 and Morrowind. Honestly, I've logged more time with Morrowind than any game in the current console cycle.
Firefighter FD 18 for the PS2. I've been playing that game like crazy. Almost every day I play it. Probably because I'm getting ready to go the the Fire Academy in the fall.
The first two Halo games, of course. Halo 1 and 2. Although that's usually when I'm planning to grind through the whole series again. Always great for fun and nostalgia.
I also replay Fable from time to time. It's amazing how much, well, BETTER it is then Fable 2 and 3. It plays better, there's more weapons, better choices of armor and it doesn't go overboard trying to make me fall in love with NPC's.
Up until a friend borrowed my copy (along with my original Xbox for that matter) I used to play the shit out of Otogi: Myth of demons. A hell of a great artistic slasher and one of my favorite action games of all time.
Finally, I downloaded Psychonauts on my Xbox 360 and the first time I played it, I loved it. I'm currently in the middle of a second playthrough but right now I'm up to the big brain tank battle and I'm reminded that just beyond that is the Meat Circus and well... I'm not sure I want to put myself through that again.
