Does anyone know of any games which feature sailing and exploration? I've heard of Salt and played Sunless Sea, and those sort of represent what I'm looking for. I'd like to sail around freely, discovering islands, building, gathering, etc.

If you've got an older computer or emulator somewhere with XP or 95/98 on it I can definitely recommend this game.
I spent many happy years in the latter half of the nineties playing this game.

The original and the remake. Quite good but after a while it does get very repetitive.
Especially the "mini-games" of sword-fighting and finding "X marks the spot" treasures.

If you can overcome the somewhat stale graphics and hard to find crafting material this is a real gem of nautical exploration.

Quite entertaining..for a few hours. It lacks the depth and content of corsairs and Pirates! but given time it could probably end up a contender.

More building and less sailing but you could configure the game world to many small islands and get the salty wind in your hair.

Opensource version of the Anno Series.

You start out stranded and have to spend some time crafting and surviving before you can build a raft/boat but after that you could probably go from island to island just exploring.
