I'm not new to Oblivion by any means but I am to role-playing it. I've made a character which likes to sneak and use bows with some blade skills, doesn't like magic so no spells not religious and loves money but wont steal from people but will kill those who attack first so my question is should I do the shrine quests like Azura, Dagon, Nocturnal ect or would this be a break of character?

Nothing except becoming a shadow, (100% Chameleon) will truly break the game. Atleast, that is how I feel. I say do all the shrines you feel like doing, no matter how high your sneak is, you will never be able to hide from the guards. Even Chameleon cannot save you from that.

Mechrunes Dagon has a shrine?
anyhow those "shrine" quests won't break any character they are a lot of fun and some are quite interesting..

I can't say I have the same problem when roleplaying.
I usually do what I feel like, and don't stick to a list of things that defines my character.
I you WANT to do those quests, do them.
If you don't want to, don't.
:)

They'd fit your character. Daedric "gods" aren't gods in the traditional sense. Your character could just view them as powerful Daedra, rather than gods.

"You worship the Nine Divines, perhaps? Have they ever helped or harmed you? Of course not. Now, worship a Daedra Lord, and you get effects... bad ones, of course, but clear and measurable effects."

Well, if you're seriously roleplaying, your character could have just pretended to be a follower to get the rewards from the Deadric gods. I don't know if you're trying to be a noble rogue though or something, so that might not fit.

There are some deadric gods that are actually good. There's good ones, neutral ones, and evil ones. And ones that are in-between those.

Not sure which is which though, some research could fix that though.

Well Azura gets you to kill Vampires and I think Nocturnal just gets you to steal something so I guess you have to decide whether that is against his moral code or whatever. Even if he's not religious he has to acknowledge the existence of the daedra so bargaining with them in order to receive an item doesn't seem out of bounds.

All of the gods in this game obviously exist, the daedric "gods" are basically stupidly powerful daedra.

I am not trying to be noble. My character just wants to have a big nice house but wont screw over anyone to get what he wants so things like the dark brotherhood is out and I might go to do the Nocturnal shrine not sure yet.

Doing the shrine quests doesn't require you to subscribe to a given cult. The Daedra are real beings that can offer you jobs (some of which are pretty fun) and, what's important, give you some unique rewards.

If you're really bent on staying true to your character concept, I'd say read up on what a given Daedra does and don't help those you disagree with.

i'd do them. i have a similar character, but mine likes magic and has, how should i put this, absolutely no fucking morals. i'm talking 'get pissed of a guard always saying 'hi' on my training runs so kill the entire district' immoral/insane.
i also use a glitch to permanently have 75% chameleon and super strength, speed, health and armour.

I never thought of those Deadra as being religious figures. They're just extra-dimensional people. Besides, you can actually see them and their "gifts" so its not really a challenge of faith if you start doing their dirty work for fun and profit.

You see i don't have this issue because I'm roleplaying as a murderous bastard. Stealing happens if i feel like taking stuff off the corpse. When the game ends, I'm going to kill every character, so far i've limited it to the odd guard and mission enemies, but when Mehrunes gets toasted (2nd playthrough) I'm going to go to every village, and slaughter them in the night, then boost my vampirism to full and take a tour of all the vampiric caves. Finally, I'll launch a full assault on every city, sparing only those i deem worthy. Tamriels about to get a lot emptier.
