You should definitely watch Samurai Champloo, or if you're a bit of a sports fan, try out Eyeshield 21.

Serial Experiments, Lain and Haibane Renmei are good for more subdued, thoughtful anime.
If you want something a little more mystery/supernatural you might watch Death Note.
Welcome to the NHK is weird and full of dark hilarity.
For a classic, I also recommend Rurouni Kenshin.

Oddball recommendation: Axis Powers: Hetalia and World Series. I don't know why I like it so much...maybe because I was a history major.
