Assuming you are equally interested in all of these games (you provided no indication of what types of games you enjoy most):
-Skyrim: It's bound to be fantastic and massive, but will likely need some time for the kinks to be worked out. Also, if you're a PC gamer, mods will be coming later.
-Uncharted 3: I'm playing it right now and I like it more than the first two games. Much more, actually. I've never had an Uncharted game spoiled for me, though, even though I just started the series in the beginning of this year. I can't say the same for another game series on your list...
-Modern Warfare 3/Battlefield 3: Not my thing, so no comment.
-Assassin's Creed: Revelations: I'd say get this one first. Revelations is supposed to provide some closure on a few major continuing storylines, and people tend to love to spout out spoilers for the series (I remember seeing them in more than a few thread titles around here last year for Brotherhood). I guess it is because of the mystery involved in the story. People tend to offer their theories on "what X means" or where the series is going next, but give away major plot details in the process without a warning. On top of that, it's a very safe series. It just seems to get better with each installment. So if you're really into the story and like to discuss it while the topic is hot, I'd go with this first.
-Saint's Row the Third: Seems like wacky fun. If I weren't completely burnt out on modern city-based sandbox games, I'd be getting this.
