I think all parts of the game are just as important as each other. If one part doesn't hold it's own, it lets the whole game down.

Realistic = Crysis

Cell-shaded = Prince of Persia [latest](don't take my word for it, thats the only one i've played with cell-shaded)

Cartoon = TF2

Concept Art-like graphics = Borderlands

Best Graphics? I'd have to go with Metal Gear Solid 4
Best Bodily Destruction? Dead Space easy.
Best AI? hmmm... Left4Dead (The infected, not the survivors)
Most historically accurate: Medal of Honour, Pacfic Assault (still the best).
Best Story? Probably either MGS4 again, or Resistance 2.
Best Weapony: Resistance 2. (That damn HE.44 Magnum is just... awesome)
Most replayability: Either Mass Effect, or Jade Empire (looooooooooooove that game)
Best overall gameplay: Resistance 2 or MGS4
