Well whenever I play Zombiemod on team fortress I go as the engie, just keep building turrets, die ya bastards die.
I think pyro would be a good choice as you could sit back and burn your way through the armies of rigmortis infested narstiez.
It's pretty obvious that Spy is the best. You could simply disguise as a zombie and avoid bumping into them.

id be the heavy if i had unlimited ammo id just stand and just cheese grate there faces with sasha

Build a Dispenser and then a sentry. I could survive for weeks by just waving my arm around.

Why not the Medic? That would be amazing... you could heal the Zombies of their zombification. Or if that doesn't work, you could riddle them full of needles, thus extracting the zombie virus.
Engineer. With unlimited ammo, and assuming the balancing laws of the regular game don't apply in the outbreak, he could build dozens of sentries and teleporters to get around/escape. He could sit pretty and watch his sentries take down zombies and using teleporters to go anywhere he wants. Not to mention that since his sentries are mechanical, he's the only class that can sleep and not have to worry about zombies sneaking up on him.
