Alright, so I'm interested in getting into the genre of jazz, but there's a lot of jazz music out there. Where do I begin?

I think you should start from the start. Benny Goodman and Luis Armstrong, then move into Dizzy Gillespie and Charlie Parker, then Miles Davis and John Coltrain, then you are pretty much ready for anything after that.

The Dave Brubeck Quartet's masterpiece Time Out is a good place to start.

That's not the start, buddy.
Of course, I went to a lecture about how jazz started in the late 1850s in the form of hymns played in churches throughout the south...

I would start with either the simpler blues musicians or modern jazz, like Robert Johnson or Spyro Gyra, before hitting any real bebop or abstract things like that. That stuff's hard to understand.

But, you should go listen to Wes Montgomery and Wynton Kelly.
Their epic masterpiece Smokin' at the Half Note is quite possibly the best album of all time. Ever. In the universe. And any parallel universes that may support life.

Yeaah.. But ragtime and reaally early jazz is a bit shit.

It starts getting good with Benny Goodman and starts getting really good with Miles Davis.

Very true.
I always liked Artie Shaw better than Benny Goodman. (Maybe just because he shares half my name.)
And I'm more of a piano man. All about Thelonious.

I Think you should just go to Emusic and cruise the jazz section. That's probably the best place going at the moment. Though it is starting to get more expensive and crappy.

Sonny Rollins is my all time favorite jazz musician. He composed a chart called Nightflight, a very fast, up beat song. Duke Ellington is also another good one. My favorite form Ellington would be Doxy.
Also, though I am not sure of the composers name, a good slow jazz song would be My Funny Valentine.

I'd go with my personal favourite: Chet Baker. He's an amazing trumpet player AND jazz singer. One of his best songs is also on the GTA IV tracklist. It's called Let's Get Lost:

For the more modern uses of jazz I'd recommend St. Germain:

If I had to suggest one album that you should get (that isn't Kind Of Blue) I'd say get;

Charles Mingus Let My Children Hear Music

Actually, pick up Blues & Roots by him, he's one of the best composers/arrangers of all time

Well usually I don't recommend him for people just starting out with Jazz. I'll recommend him if the person wants a singer in the jazz too. Frank and also Sam Cooke.

If you like jazz remixes of game music, I'd look into the Phoenix Wright jazz remixes. For actual jazz, I would recommend any of the above, as well as Count Basie. I forget if he would be considered "entry-level" jazz music to listen to, but it does deserve a listen down the line.

He's pretty familiar to most people.

Though I'm not too fond of singers.

Not sure actually. I think it's because you can gain a greater appreciation for the music in singing jazz if you start off with just instrumental. I could type a better sentence but my brain has stopped.
