RPGs where you can do everything in one playthrough?

So I'm a big fan of free-roaming games where you can do a 100% playthrough, with lots of sidequests and collectibles, like Assassin's Creed, the Legend of Zelda, and recently, Far Cry 3. Now, I recently got into Mass Effect, and was blown away by the quality of the story, especially considering it's an open-ended game. But it did bother my completionist side that not every stat could be maxed out, like it could be in, say, Fallout 3. That same OCD side of myself has prevented me from getting into Skyrim. Can anyone recommend other RPGs (or other games) where absolutely everything can be unlocked, obtained, completed, and maxed out? It'd be much appreciated.

The Dragon Quest games are usually very lenient on completionists. Dragon Quest VIII: Journey of the Cursed King comes to mind. There's a hundred-plus mini-medal collectible sidequest, a monster-capture sidequest (plus a monster-battling arena), hundreds of items to synthetize through alchemy (and recipes to collect/figure out), hundreds of items and monsters to write down in your log, tons of outfits... you can do all these in a single playthrough, since there're no New Game Pluses and there're no "lost forever" when it comes to 100%.
