Should businesses bother with cleaning pizza pans?

Here's a strange question: How would you feel if you found out that the pizza restaurant (Pizza Hut, Dominoes, college dining hall, local pizzarias, etc) you went to didn't clean their pizza pans every night? Like there could be baked in crust in the pan, or the pan drops on the floor, but it's re-used anyways.

Are you ok with knowing that any germs on the pizza pan are apparently killed from being in the oven?

Meh. As long as they're cleaned, like, once a week, I'm cool with it. Doesn't have to be after every pizza...

I wouldn't give them any more business.

If they're too lazy or ignorant to clean the pizza pans (which shouldn't require much time or effort to clean), then who knows what other short-cuts they're taking and how negligent they are in other basic standards of food preparation and hygiene.

Also, despite the fact that most germs and bacteria should be killed by the heat of the oven, the accumulation of baked-in crust and other detritus will impact the quality and impair the flavour of all subsequent pizza crusts. Even if I couldn't tell that my pizza was of substandard quality, I still wouldn't want to pay for and eat a substandard pizza just out of principle.

If it's anything like the bakery I used to work at, the pans themselves very rarely get washed at all. This is because the racks we use for baking are "seasoned". If you burn grease on a metal surface enough times it becomes non-stick and the allows the baked good or whichever to slide off easily leaving very few food particles behind. Things like brick ovens are themselves so hot that anything that might fall off is reduced to cinders and brushed away during lulls in use.

Well pans that are being used multiple times a day for only one dish shouldn't be cleaned after EVERY pizza but I wouldn't put it past Pizza Hut to not wash them at all.

They should be cleaned after every incident that could contaminate the food. That's the least they could do.
