The Silmarillion does not include Dwarf lore?

So I pretty much finished reading the Silmarillion and all I can say is, "I can't believe Lord of the Rings is even a part of this universe" yeah lets just say that the early ages of Arda feels more "Magical and Fantasy" than how the Hobbit and Lord of the Rings present its world.

But on to the topic of the title, as I read through a lot of it, I was surprised of the lack of any chapters dedicated to the Dwarves.

I know that the Book covers already how the Dwarves came to be (Created by the Valar, Aule, because he was impatient of the arrival of the Children of Illuvatar)

And there are some bits here and there concerning Dwarves (Such as Thingol's Death and the character of Mim)

But really nothing much about them, nothing on Durin the Deathless, nothing on their battles they have fought, nothing about the origin lore of Erebor and Moria, or of how Durin's Bane (The Balrog/Demon of Moria) surfaced.

If the Silmarillion does not cover these things than where were they covered in?

A lot of the stuff you're asking for happened between The Hobbit and The Lord of the Rings. The Silmarillion doesn't reach that far. Go read the appendices if you want more detail about the stuff that happened around the time of the last age.

Which book contains these appendices?

I have what is considered all the "important" books of the Tolkien Legendarium.

The Hobbit, Lord of the Rings, the Silmarillion, Unfinished Tales, and Children of Hurin. And will get the upcoming Beren and Luthien book.

(Anything to read more on Huan the Wolf of the Valar)

Did you read the extra material at the end of TLotR? That's the appendices. They cover a lot additional information, such as the relationship between Aragorn and that other lady. Honestly, Tolkien doesn't focus too much on dwarves. They tend to mind their own business. They do take part in a lot of the major parts of the lore, though. I didn't feel like they were underrepresented.

I always thought the dwarves were very straightforward. Yes, they have history (apparently being made from stone?), but that history has been pretty stagnant for as long as the dwarves have existed. They're short, they have beards, they love treasure, they live underground, they're obstinate to everyone, especially elves, and they're rough and tumble kind of folks. They've never really had that air of mystery and sense of superiority that elves do, nor do they seem to care much for magic or gods.

So really, beyond learning their origin, there doesn't seem to be much to know about dwarves beyond simple historical facts, which they don't seem keen on sharing.

Maybe Tolkien didn't like Dwarves. He did make them greedy, dour, humourless, and generally rude. That's not love.

And the fact they are rude, yes they are.

But they are not humorless, you want Humorless Dwarves (who are still awesome by the way) look at the Warhammer Fantasy Dwarves:
