The ones you consider as being the best (sort of - it's silly :p - if everything was to end, and you got the possibility to save three of them) ?
Pick only three, no list, this is precisely the idea, having to choose only three :)

The ones I consider being the best in the legacy of cinema :

Dr. Strangelove (Stanley Kubrick)
Dead man (Jim Jarmush)
Brazil (Terry Gilliam)

Star Wars episode 1 ( actually the whole star wars saga)
Eternal Sunshine of the spotless mind
Big Fish ( Actually this one is my favorite of them all! Ewan Mcgregor does a sick job with Tim Burton)

Army of Darkness
Dawn of the Dead

I'm a real zombie enthusiast.
I can see that :p
But which Dawn of the Dead are you referring to ? 1983 Romero's, or the recent one ?
You should watch Tom Savini's version of The Night of the Living Dead (1990), it almost manages to be better than Romero's original one (him again :p)....well, not completely, but it's still great for a remake.

28 Days Later,
Shaun of the Dead,
and a very little known short film called Coffee and Allah. I like it mainly because I know the main actress.

This is a tough one since I have a lot of favourite films, but if I had to choose I would probably go for (in no particular order):
The Highlander
The Lost Boys
The Breakfast Club
