I would have loved a remake of Metal Gear 1 and 2 to both make it more into a Metal Gear SOLID type game, while also allowing for updating and retroactively ironing out all the plot holes created later by such games as MGSV.

I think not showing exactly the plot of Metal Gear 1 and 2 is for the best. Knowing it as background lore that you have to read about makes the characters more richer when we play them in later games.

Like do we want to see Solid Snake in an origin story type of game where he's a complete and utter noob?

Eh, those first two games though, are kinda bad, atleast in presenting the plot. Plus much of later plot elements were definitely not considered when they were made. Plus MGSV basically was a big drill into making the older games make even less sense.

And Snake as a 'noob' is still a genetically modified highly trained super soldier/spy.

Aside from the fact that Konami really can't be trusted to make a good Metal Gear game at this point, the big issue is that Metal Gear Solid effectively was a remake of Metal Gear 1 and 2, but MGS didn't overwrite (most of) the plot of the previous games(except for that insistence that Big Boss and Snake discussed the clone thing before Snake fought him in MG2, when no such thing happened). There are numerous setpieces, puzzles and bosses that were straight out recycled into Metal Gear Solid and even the basic plots aren't all that different(I can provide a list of examples if needed). It would be tricky to do an actual remake of either of those games without it feeling derivative of MGS at this point(since it kinda already is).

MGS2 pretty much just copied MGS, but admitted to it as part of the plot.

Except a remake could actually NOT do those things, hence why I want a remake. Not a shot for shot remake, but just one that takes the general plot of those 2 games and makes it well, fit the rest of the story.

I will say that I wouldn't mind a remake of MG that:
-Didn't feel like a chore to actually play pretty much all the time(Take off gasmask in a gas filled room to use keycard to open door to get out of the gas filled room, taking losing health the whole time, because Snake doesn't know how to hold a keycard and wear a gas mask at the same fucking time).
-Has more of a plot then "Rescue Hostages. Metal Gear. Big Boss is the bad guy?"
-Replaces the Hostages Rescued=Rank(including the possibility of losing rank if you accidentally kill one) system with something else, like tie health bar size to progress or equipment or something.
-Can't be made unwinnable because you accidentally killed a hostage during the 2nd to last boss fight and now don't have enough ammo to actually blow up Metal Gear because you HAVE to be at the max rank to actually win the battle(Hope you saved before you killed that hostage)
-Fix the Metal Gear boss battle to be more interesting then planting bombs on it's legs in a certain(very specific) order while dodging lasers from the ceiling while Metal Gear literally just sits there.
-Make the battle again Punished Big Venom Boss more interesting then hit him in the face with a couple rockets.

Metal Gear is one of those "Well, it's an important piece of gaming history" things because I honestly can't think of any other reason to play it other then then being able to say you played every game in the series.

MG2 I'm honestly fine with the way it is, other then making the Big Boss fight less of a 5 minute hunt for a lighter and a spray can and more of an epic duel. Oh, and the Swamp maze needs to fucking go because fuck that part. Making Metal Gear D a bit less of a chump would be nice too(Nuclear armed walking battle tank designed to tip the balance of global warfare....taken down with a couple grenades tossed at it's kneecaps).
