Any game with the words, "metal gear solid," in the title, (The first two games were ancient, and so had a soundtrack comparable to dodgy ringtones.) Also, Silent Hill. I've never actually played the games, but I love the series' music. Uncharted and its' successor has an amazing score as well.

I agree with both of these posts.
Zelda brought us great songs such as Saria's theme and, like TheNamlessGuy said, Gerudo Valley.
Fallout 3 had good western like music when you explored the Wasteland. And the radio you had gave you old songs that seem contrasting yet perfectly fitting to the game. Three Dog FTW!

For the game with the soundtrack that left the greatest impression on me it'd have to be LoZ:OoT. It's a fantastic soundtrack you have to agree.

The most recent to catch my attention would be Mirror's Edge. It had as great theme.
