But theres loads of others for me, always been a huge fan of the Final Fantasy soundtracks (numerous across all the games), the Total War series generally has great sound tracks in it, some memorable tracks and some that are subtle but add a lot to the gameplay and scenes.

Xenogears. Haven't heard a better ensemble of musical pieces since I popped in the demo included with Brave Fencer Musashi.
The first Mass Effect, certainly. And although the soundtrack isn't that great as a stand alone the OST to Mirror's Edge fit the game very well, I thought.
All of the Fire Emblem games have good soundtracks, as do the pokemon games. For atmosphere, I like Bioshock, the World ends with you, and 9 hours 9 persons 9 doors.
The Painkiller soundtrack was absolutely amazing, I've never heard an OST quite like it since.
I mean seriously, what better backdrop to killing swarths of hellish beings?
A close runner up would be the Elder Scrolls series from Morrowind-Skyrim, I've listened to those outside of the game really regularly.

Bastion does have a very nice soundtrack.
I have a lot of favorites, but I've always really enjoyed Siren Blood Curse's.
A lot of people just think I'm weird though.
L.A. Noire is also a big favorite.
Other runner-ups: Uncharted, Braid, Enslaved.

Game soundtracks that still rock for me include: Goldeneye64, Kingdom Hearts, Dragon Quest VIII, Shadow of the Colossus.
All-time favorite soundtrack has gotta be Donkey Kong Country 2. 32-bit musical mastery by David Wise.

i love ALL the songs from Final Fantasy 9, except that damn upside down castle place. the song is awful there but every other song is just epic and pretty and awesomeness!
