What do/can you use the Uplay "coins" for anyway? I did unlock a thing in Far Cry 3 with them but- are they something you can use to buy games on Uplay, if you gather enough?

Agreed, I've never had a problem with Uplay/Unisoft games and playing. Granted, some of the ones that start in Steam, then Uplay and back are rather idiotic but as long as they function... GFWL was/is a horrible system, I have a file drawer full of GFWL games that I could never get to run...
