The blinking in Legend of Zelda Ocarina of Time. I was 8 when I first saw that and literally called my dad in to show him that Link could blink. Tiny, totally insignificant, but amazing.
I would LOVE for it to work, but there's a real risk with games like that of promising freedom and only meeting it half way. The hacking mechanic looks amazing, and I really want this game to be awesome.

Okami, definately, Xenosaga (even though episode 2 was just...*shivers*), and I'd say LoZ Majora's Mask. Honestly, I liked that game almost a little better than Ocarina. Sin and Punishment, Rise of Legends, Psychonauts (DUH!) and the Persona series.
