One of my favorite recent boss battles was with Omega Ripley in Metroid Prime 3. Cool battle.

As far as just having fun, I had a ton of fun playing SMG, Ghost Squad (dual Wiimote-weilding rules), and Portal most recently. They're not just addicting, challenging, whatever, but purely FUN to play, I found. Would love to play Everyday Shooter, looks like pure fun as well (no PS3 :( ).
