Well, let's see... I currently own 17 360 games, and I've beaten 10 of them. That's just the ones I've actually purchased, I have a much lower rate of finishing games I rent. When I stop having fun, I stop playing.
Baldurs Gate 2. I got miles through it and then one of my characters died permenantly because I was an idiot. I had that team from the beginning of the first one and jusy couldn't bring myself to start it all over again. That was so bloody annoying. I WILL go back and finish it one day though!
Assassins Creed 1 and 2. I never finished either, I had to read up the backstory to AC1 so I would have an easier time with AC2. It still makes no sense.
I completly agree with you! It looked amazing, the physics were great, but how many times do I have to clear the exact same checkpoint when I'm literally 10ft from it's trigger?
Morrowind. I think the longest I have ever played that game is 30 minutes, which includes the time spent in the construction set. It's probably one of th eslowest most boring games I have ever played.
Stopped playing Bomberman because I couldn't find a gold card in one of the ice levels and got stuck. Only played it in the multiplayer mode after that and I somehow lost my save.
Also Ninja Gaiden 2, but that's just because I got stuck on that bastard Dagra Dai. Fuck, Daikatana's final boss was fun in comparison.
I stopped playing Prince of Persia 2008 because the AI got stuck in a loop where only the normal melee attack worked. It would be fine but it was that female boss and she either blocked my attacks or got priority, so after about 15 'deaths' I stopped playing, stopped myself from breaking the disc in half and threw it under my bed.
There are more games, but in about 16 years there have been a lot of games that I still remember abandoning. This list includes all 30~ SNES games I have and over half of my N64 games so I'm not going to bother.
I actually track which games I own/finished on Backloggery.com, I would recommend it if you own quite a few. Originally I was just going to use it as a way to motivate me to actually play through ROMS and games I bought on XBLA and PSN. But I've ended up putting my whole collection on there.
Games that I just could not be arsed to finish are:
Prince of Persia: Warrior Within, could not get past the last Boss, I keep meaning to go back to it.
Damnation, Velvet Assassin, and Call of Juarez (the first one, quite liked the second) I rented them all and just could not bare to play them any longer, sent them back unfinished.
Quite a lot of my PC games I haven't finshed, because my desktop died on me (5 years ago?) & I couldn't afford to get to fixed at the time. Ended up making do with just internet surfing by rocking my old OLD Windows 98 laptop right until last summer. I use a Macbook Pro now, keep meaning to install XP on it via boot camp and play through some of my (old now) PC games. Steam for mac is out in a few weeks too.
My DS games I've not finished because my DS got stolen, (very very tempted by the XL at the mo)
Some other games I just haven't finished because I put them on the back burner and never got back to them, life, work, new games, wanting to play thorough the first game again before starting sequel, etc.

GTA 4 - Got bored of it near the end
Viking:Battle for Asgard - Stuck on the final boss
Madworld - Stuck on a boss
Okami - Fiddly controls pissed me off
Will probably get around to finishing them at some point though
There's been plenty of games over the years that I never finished for various reasons
Fallout 3- Got bored after Megaton and the Vampire quest. Command Consoled myself to awesome, took on the DC. Got bored.
Oblivion- Would do the arena and guild quest depending on build. Got bored.
The Witcher- Great game, just never enough time to invest. Will be going back to this one.
Far Cry 1+2- Got bored.
Half life 2- Hit one physics puzzle I just couldn't beat, and rather than look it up just quit playing.
World in Conflict-deinstalled to make room for DoW2
Diablo 1+2- Suffered from "need to make a new build" syndrome
Final Fantasy XIII: I got up to this boss who had stupid high health and casts a kill spell after a certain amount of time. What game was basically saying was, "*****, you gotta grind. A LOT!", which was weird because their was almost no grinding up until that point.
MGS4: Just got tired of it. I'll pick it up again once I play through the other games.
Bayonetta: I don't know. The game just got stale after a while.
