Fallout 3 or New Vegas the world is huge so there lots to see and do.

and Tales of Symphonia as I have sinked 200 plus hours into playing it. It is the largest RPG I have ever played and I have beaten it over 5 times.

yeah tales has a shit ton of replay in it if only for the fact that if you play it long enoth and get enoth grade you can kick the main bosses ass in the mid game so rewarding.

Morrowind. You will be lost in it. And if you get bored of the storyline Bethesda made up, you can easily download a mod that completely recreates the world with a new story, the replay value to me is infinite.

Edit: It also helps me get my mind off of Skyrim, so that's a plus too.

Word of warcraft. And Pokemon. Even if I completed to 100% all pokemon till perla, I can't say the same for WOW. But my brother have learned where are any quest object for the majority of the quest, so it make me feel ok with the month of logged time that I spent on it.
